I do love lentils. I love them in my soup, I love them with my bread and my salads. I love them round, red, green. I even love them over cooked and packed with mustard.
As a vegetarian, I have always struggled about eating the right thing and getting enough proteins in. A lentil dish is definitely THE healthy and budget-friendly meal for the vegetarian on the go.
Here is what you will need :
- Green or Red lentils ( a £1.15 pack will definitely last you more than two weeks )
- One vegetable stock
- Two sweet potatoes
- One red onion
- Oregano or Basil
- Black Pepper and Salt
- Sesame or Olive Oil
Step one : Grab your chopping board !
Peel and slice your onion. Cut your sweet potatoes into big chunks. Throw them into your mixing bowl and add your black pepper, salt, oregano and oil.
Step two : Melting Pot !
Rinse your lentils with fresh water before boiling. Add water but make sure the lentils are just barely covered.
Add the vegetable stock. Bring the mix to a rapid simmer, then reduce the heat to low for the rest of cooking. Add your sweet potatoes and red onion.
Do not cover your pot and set your 30 mins timer.
Step three : Enjoy !
After 30 mins, strain the lentils. Return the lentils to the pan with your sweet potatoes and your red onion. It is now time to add salt and your favorite spices ( I like to add some chili powder and some more black pepper ).
And here you have it, a colorful dish packed with proteins !
