Veggie Fun Bun

Tonight my best friend is cooking. He is not vegetarian but respects my beliefs and never cooks meat when I am around. He is currently making dinner and it smells delicious.

Here is what you’ll need if you too, want to make his famous “Veggie Bun Delight” or “Fun Bun

2 Whole Wheat Rolls

Quorn Chicken

1 Red onion

A pack of Wild mushrooms

Tzaziki

Cornichons

 

As you’ve probably guessed by now, there are two types of rolls. A fresh one with Tzaziki, Cornichons and a light homemade vinaigrette and a warm and savoury one with the red onion, the mushrooms and the quorn chicken.

  1. Thinly slice your onion and throw it in the pan with a teaspoon of sesame oil, your mushrooms and your quorn chicken.
  2. Stir until a bit softer. Totally optional but you can add a tiny bit of maple or agave syrup if you like your onions caramelized and your meals a bit sweeter.
  3. Toast your buns and spread your delicious mix all over.

The picture does not do it justice but it was effing delicious ! I love the crunch of the cornichons with the softness of the tzaziki.

Two is usually enough for me as I like to have a snack later in the evening one or two hours before I go to bed. If you plan on going out, this and a side of sweet potato fries will definitely fill you up and keep you going all night !

    • Hi 🙂 . Well at first I have to admit that it was more for dietary reasons. I have never liked red meat and would often never eat eggs and drink milk so I thought that I could become fully vegetarian.
      Then I also started to look into what it meant and how every day, I was helping the planet and the animals.
      My goal is to become vegan one day !

      What were your reasons ?

        Well, I’ve always been one – from a faith standpoint i lean towards my mother’s – Jainism – which is the religion of nonviolence. We believe that hurting any life form invokes bad karma. I’ve never eaten meat. It was a bit harder when I was living in the US – had to cook a fair bit of the time – but at least i didnt break my vows. Now I’m back in India, so its easier. – Vaibhav
