What I eat in a day #2 – Vegetarian Recipes

Happy 14th of July guys !

First of all, I would like to thank everyone who decided to click on my tiny follow button. Today is my blog one month anniversary and it warms my heart to have so many beautiful people reading it.

Whilst I do not have a lot of followers, I do appreciate it when someone decides to hear me out so thanks again for everything.

Today was a slow day for me. I stayed home again and spent some quality time with my family.

I will be going back to London very soon and not looking forward to it. I love my friends, where I live & the people in general but after the whole Brexit thing, I might have to think twice before spending my life over there.

Breakfast was light since I woke up around 10 am. I had a full glass of homemade orange juice and two apples. I decided to spend the rest of my morning outside reading. I recently went to Bath ( Thermae Bath Spa is da bomb by the way ) and picked up one of my favorite book : Bonjour Tristesse by Françoise Sagan.

As an aspiring writer, I have always been interested in languages, especially translation in creative writing. I wanted to compare the English version to the French version and so far, so good.

We started to make lunch two hours later so there was no time for me to get too hungry.

For lunch we had a fresh tomato & mozzarella salad with a thick balsamic vinaigrette. We also had Hummus & rice cakes to go with it.

Green bean salad with tofu for main.  We cooked everything in lemon and garlic and fried the Tofu.

This lunch is quick to make and perfect for hot summer days. The green bean salad can also be eaten cold if you’re into that.

As a snack, my sister made an amazing tiramisu and I had to have a piece.

Would you just look at all that flavorful goodness. So creamy and thick and the taste of coffee… I was drooling.

I will definitely ask her to give me the recipe. If you guys know a very good vegan version, please let me know, I am genuinely interested !

With the Tiramisu, I had a small coffee outside with my dad. I just got out My week without coffee and this was the perfect occasion to have a cup.

There is just something about the cold tiramisu melting in your mouth and the bitterness of coffee. Heaven. As you can tell I get very excited about Italian desserts.

My dinner was light. I felt like my carb and protein intake were a bit low for the day so I had some more hummus with three or four slices of baguette and spinach on the side. I did not have time to take pictures since I was in a rush but there is nothing exciting about spinach.

I do not count calories because I find it very unhealthy so I wouldn’t be able to tell you how many calories I eat in a day. My guess would be between 1900-2100. Really depends on what I am doing and where I am. I tend to eat more when I am at home.

  1. Tiramisu is one of my favorite foods! When your sister gives you the recipe would you mind posting it? Unless it’s a family recipe or something that you don’t want to post, which is fine. Also another heavenly snack is kale chips. They’re super easy to make and if you haven’t tried them you definitely need to!
