I am on a roll. Three recipes in a week. A miracle ! But also what most of you requested so I am more than happy to oblige.
Today is going to be an easy one (no shit ) and a tribute to my Italian ancestors.
For this amazing vegan pasta recipe, you will need
A pack of whole wheat spaghetti
A can of chopped tomatoes ( read it to make sure it is 100% vegan )
Red Wine ( optional, I had some left and I remembered my dad using it to make spaghetti & meatballs so I thought, what the hell )
Salt & Pepper & Oregano
Red Onions ( optional )
Vegan Sausages ( I picked up mine at Tesco )
For the sauce, warm up your pan, throw one spoonful of olive oil, your can of chopped tomatoes, your sliced red onion, half a cup of water, two spoonful of minced garlic. Cover it all up, put on a 20 mins timer and move on to your pasta.
For the pasta, you know what to do. I will let you cook them as you please but PLEASE, do not throw your uncooked pasta first and your water on top.
About 10 mins in, add some wine to your sauce, your chopped sausages, salt & pepper and oregano. I have to admit, I added some minced garlic as well ( because I am obsessed ), covered it up and lowered the temperature.
I hope you like this recipe. It was definitely fun to do, very filling and a change from my lentils and rice usual.
