Vegan Zucchinis & Red Peppers soup

Hello, Hello, Hello!

I hope you are all having a fantastic day, wherever you are.

By the time you’ll read this, I’ll be at the hospital getting rid of my wisdom teeth. So in honour of the incoming days without solid food, here is a little vegan soup I made a week ago.


For this recipe you will need:

  • A pan full of cut zucchinis
  • A pan full of peppers
  • two tablespoons of curry powder
  • 25 ml of soya cream
  • One cup of water
  • Spices of your choice – I went for roasted garlic, salt and oregano
  • Optional: croutons and grilled garlic bread

Throw your cut zucchinis and peppers in boiling water. Wait until soft and add a spoonful of olive oil. In a blender, add the vegetables, the soya cream, your spices and your cup of water. Mix it all until the soup is creamy.

Add the curry powder, mix it all again and you’re done! Don’t forget to serve right away as homemade soups unless left in a pan tend to go cold quickly.

I cut some leftover bread whilst I was cooking, spread some roasted garlic on it and grilled the slices for about 10 mins in the oven.
