Sweet Tofu with Noodles & Vegetables

Hi Everyone, I hope you are all doing fantastic. I have another recipe for you! I am sure I haven’t invented anything but I wanted to share with you what I managed to create with leftovers a week ago or so. I had a really hard time for some reasons to find the Tofu in Carrefour ( an equivalent of Asda I guess in France) but the rest of the ingredients was patiently waiting for me at home. For this quick & easy summer lunch you will need: Agave syrup: two soup spoons Sesame seeds: one coffee spoon Tofu: I used 250g for my sister and me Noodles: Rice noodles would be ideal in my opinion (but I used egg noodles) Salt&P, some crushed garlic, a drizzle of olive oil Soy sauce Peppers: mine were already cooked (we used 2) Onions: one is more than enough I cooked my sliced peppers and my onion together with the spices, olive oil and a glass of water for about 15 mins. Easy Green Lentil soup with Garlic Toasts

Hi Everyone, I know that this month is dedicated to cruelty-free beauty but this recipe is so tasty and easy that I needed to share it with you. You will need: A pack of brown lentils Mushrooms Red onions Tomatoes Whole wheat bread or an old baguette Olive oil Spices of your choice (I added chili, soy sauce & pepper) Garlic Olives (optional, I just love them) In a large pan, bring your water to a boil. Add a spoonful of olive oil and your lentils. In my experience, brown lentils tend to take a little more time to cook than red lentils for example. Once my lentils are half-way there, I add my chopped mushrooms (an entire pack) and two sliced red onions. I usually cover the pan for the last 10 mins of cooking and get my toasts ready. If you have a clove of garlic, chop it, mix it with a spoonful of olive oil, salt&pepper and spread it on a piece of your baguette (or sliced bread). Put your slices in the oven until …

Tofu Burger Recipe

Hi Everyone, How are you? Last recipe for a little while. I hope you like them. Let me know which one is your favorite (if you have one). For this recipe, you will need: Tofu Sweet peppers (two) Mushrooms Buns (brioche buns were the perfect fit) Cheese (optional, I grabbed my favorite vegan cheese, garlic&herb at Whole Foods) Rocket Salad Olives (optional, I just love them) I cut my mushrooms and my peppers, cooked them in sesame oil for about five mins. Grabbed my brioche buns and instead of warming them up in a pan like I usually do, I put them in my waffle maker. They turned out perfectly crispy I was so happy you guys! As you can see, the piece of Tofu I got from Whole Foods is HUGE (you get two of them in a box, already cooked and grilled for £2.99) and I just warmed it up with the vegetables. Hi Everyone, I hope you are all doing great. Welcome to the second recipe of this three parts thingy I am doing right now on the blog. PS: I just wanted to address something quickly. I have been nominated for two blogging “awards” since I did my 7 days challenge. I wanted to thank everyone who took the time to nominate me and check out my blog. Whilst I don’t have time to do them all, it doesn’t go unnoticed and I’m more than grateful. For this recipe, you will need: Pasta Mushrooms (one box) Carrots (I used three) Shallots (one or two) Courgette (half of one) Alpro Almond Milk Unsweetened Mustard Cut your veggies, cook the mushrooms and shallot on the side and the carrots and courgette in water. Since everything is gonna go in the oven, I would suggest to not cook your pasta and mushrooms entirely. Easy Courgette Spaghetti

Hi Everyone, I hope you like this one because I was so proud when I put it together. You know that I advocate easy, quick recipes and late-night snacking. Ingredients: Courgette Spaghetti (Tesco) Oregano, Garlic, Soy Sauce, Crushed Chili Vegetable stock Olive oil Vegan sausages Truffle mustard As always, I love when I can just go my ingredients in a pan and serve a great dish 10 mins later. For this recipe, I started with throwing spaghetti and bean sprouts in a pan together with oregano, garlic, chili, a spoonful of olive oil and my vegetable stock. I added two glasses of water, covered the pan with a plate and moved on to my vegan sausages. My all time favorite, you may already know, are the vegan sausages from the Linda McCartney’s brand. I mixed soy sauce and mustard together. Dunk my sausages (4 out of the 6) in the mix and put them in the oven (180°) for 15 mins. This dish honestly takes 15 mins from start to finish. My favorite vegetarian/vegan snacks

Hi Everyone, I hope you are doing well. Today is just going to be a quick post because I felt like sharing what I’ve been eating lately. I will post a quick and healthy recipe soon but in the meantime, I hope this one gives you some ideas! I usually buy all my snacks at Tesco. Holland&Barrett, Planet Organic, Boots snacks I bought were all impulse purchases. I don’t regret them, don’t get me wrong, but Tesco, and even my uni shop have some great affordable vegan/vegetarian snack options. Eat Real Chips I know that you can find them at Wholefoods, H&B and Planet Organic. I have seen them over there for over a pound whilst my uni food shop sells them for £0,49. Strong incentive for me to go to ALL my classes. Graze – Veggie Protein Powder This is what I eat before the gym or in the morning when I am in a rush. I tried a vegan Galette des rois

Hi Everyone, I hope you are all doing amazing. If you don’t know, la galette des Rois is a tradition in France. We celebrate right after New Year’s Eve (another excuse to eat more). I tried to go to several French bakeries in London but couldn’t find anything. My original plan was to buy one galette for my friends and make a small one for myself (since I am doing Veganuary). I found this super cute french vegan blog with a recipe and I decided to give it a try. I will add the original recipe at the end of the post and try to translate it for you guys as best as I can. You will need: 2 puff pastry sheets (made without butter) 200g of crushed almond 40g of vegan butter 80g of sugar 60g of coconut oil (optional for me since I already had the vegan butter) 100g of soya cream 5 cL of soya milk (I used almond milk) The recipe is the easiest (I recognized I got rid of some stuff and added others). Cheeky Veggie Dinner Date for under £10.00

Hi Everyone, I know. Finally. A recipe. It has been so long. I have been so good at coming up with new ideas and uploading two times a week that I have forgotten to write down what I ate. Stupid me. Here is what we had for dinner a couple of days ago. It is a vegetarian peppered steak, baby potatoes, mushrooms and broccoli. The meat-free peppered steak is from Quorn. You can find the brand at Tesco and I believe that they have an offer running. Something like buy 3 of their products for £5.00 ( not sponsored by the way ). Quick Veggie Burger with Pepper Steak & Gorgonzola Sauce

Hi Everyone, Another quick and incredibly tasty recipe for you. I just had this for lunch with a nice glass of red wine. I love love love burgers and this one gave me the best food orgasm. You will need : Quorn Pepper Steak or any Vegan/Vegetarian Steak Kale  Gorgonzola Cheese  Seeded Bread Salt & Pepper & Hot sauce  Hazelnuts ( optional )  Get a vegan steak, vegetarian pepper speak or the meat of your choice and place it in your pan with a bit a olive oil ( or sesame oil for maximum deliciousness ), salt & pepper. In another pan, place the cut kale and add water. Cover it up and let it simmer on low. Get back to your steak, turn it around and place a cube of Gorgonzola cheese ( optional ) on top and let it melt. Saucy Sausage Pasta ( Vegan )

Hi Everyone, I hope you are well. I am on a roll. Three recipes in a week. A miracle ! But also what most of you requested so I am more than happy to oblige. Today is going to be an easy one (no shit ) and a tribute to my Italian ancestors. Easy Vegan Rice & Vegetable Recipe

  I am back with another recipe ! And it’s easier than the last one ! If they keep getting easier each time, I soon won’t have enough material for an article. For this easy(ish) vegan recipe you will need : Rice ( Brown, Long, Short, White ) Vegetables ( your favorite )  Soy Sauce  (Sesame Seeds) Hot Sauce Olive Oil  Salt&Pepper  Minced Garlic Cook your rice and set it aside whilst you take care of the vegetables and sauce Make the sauce : In a bowl, pour one spoonful of olive oil, one spoonful of soy sauce, drops of hot sauce, and as much minced garlic as you want. I added the salt and pepper at the end as the recipe already had soy sauce and a peppery hot sauce. Throw your vegetables in the pan and wait for them to cook a little bit. Hi Everyone ! How was your week ? I haven’t been posting a lot because I have been busy with uni and job interviews etc..overall a busy but enjoyable week. I had my whole weekend planned, ready to be productive and enjoy the first days of fall, but I got drunk on Friday. It is so dangerous to go out on a Friday night. You think you will have two days to go out again and recover when in fact, in my case anyway, you always end up going too hard on the first night out and won’t move from your couch for the next two days. So in honor of my legendary laziness, I present you with the easiest tart you will ever make. Easy Lentil & Rice Curry

  I have been so inspired by Fall lately that I had to put together this quick recipe for you ! It is full of flavor, high in protein and will keep you full throughout the day. For this quick recipe, you will need : Red or Green Lentils Brown Rice Curry Powder Coconut milk Chili Powder One red onion Green peas Salt & Pepper So I bet you all know how to cook lentils & rice. Throw them both in the pan with some salt, cover it up and check on it once in a while to avoid overcooking and transforming it into a mushy mess. For the curry sauce, grab another pan and heat it up with some coconut or olive oil. Once it is warm, pour the coconut milk with curry powder and chili powder. Keep stirring when you add the ingredients, to make sure the taste is even and avoid any chunks. Add the onions, peas and whatever leftover veggies you might find in your fridge. Veggie Fun Bun

Tonight my best friend is cooking. He is not vegetarian but respects my beliefs and never cooks meat when I am around. He is currently making dinner and it smells delicious. Here is what you’ll need if you too, want to make his famous “Veggie Bun Delight” or “Fun Bun” 2 Whole Wheat Rolls Quorn Chicken 1 Red onion A pack of Wild mushrooms Tzaziki Cornichons   As you’ve probably guessed by now, there are two types of rolls. A fresh one with Tzaziki, Cornichons and a light homemade vinaigrette and a warm and savoury one with the red onion, the mushrooms and the quorn chicken. Thinly slice your onion and throw it in the pan with a teaspoon of sesame oil, your mushrooms and your quorn chicken. Stir until a bit softer. Totally optional but you can add a tiny bit of maple or agave syrup if you like your onions caramelized and your meals a bit sweeter.
